Indulge yourself with the perfect vegetarian dish for cold winter days! Cheaf Eak from The Tongsai Bay has elaborated a nice potpie recipe for a little Greek spirit in Thailand. Take the Greek taste into your own kitchen and enjoy the mouthwatering oven baked Greek inspired spinach pie with ricotta cheese, garlic bread and rocket salad. A perfect mixture of delicious and healthy!
Ingredients:
Potpie
180 g puff pastry
140 g Organic garden spinach
20 g white onion, chopped
80 ml Whipping cream
25 g garlic, chopped
60 g ricotta cheese
Olive oil
1 yolk
Garlic bread
200 g baguette bread
45 g Parmesan cheese
25 g garlic, chopped
25 g salted butter
5 g Italian Parsley chop
Rocket salad
45 g rocket salad
60 g cherry tomato
Olive oil, vinegar, salt, pepper
Directions:
- Boil the spinach shortly until soft. Heat the pan and gently roast the chopped garlic and onion in olive oil until brown.
- Add the boiled spinach with whipping cream and ricotta cheese to the pan and season with salt and pepper.
- Cut the puff pastry in pieces to cover the pot and baste it with yolk. Bake it for 7 minutes at 250 °C.
- Cut the baguette into half and baste the butter, Parmesan cheese, parsley and garlic on both sides. Bake it until its brown. 5. Mix the rocket and tomatoes and season the salad with an olive oil dressing.
