When you think of Italy, what comes to your mind? Pizza and pasta? The Italian kitchen has so much more to offer than these two – so much that it even has its own day of remembrance! Today, on January 17th, the day of Italian cuisine is celebrated worldwide and we have a delicious recipe for you, from the Restaurant Pizzeria La Tor that is part of the Dolomit Homes & Hotel.
Italian cuisine is much more diverse than you might think and is shaped by the different regions of the country; at La Tor it is the ladin cuisine. In Italy, the main meal is traditionally served in the evening, including starter and dessert. Incidentally, there are often two warm courses: the carbohydrate-emphasized first course (Primo piatto) and the high-protein second course (Secondo piatto). In addition a delicious glass of red wine, perfect!
Before we introduce you to the sweet and absolutely delicious recipe, a few facts about Italian cuisine to show off at work or with your friends:

- Italians don’t put olive oil in the cooking water of the pasta – better to save some cooking water and mix the pasta with it after pouring, so they won’t stick together either

- Cappuccino after dinner? No, thank you. Italiens enjoy their Cappuccino in the morning, in the evening a caffè, an espresso is served
- Spaghetti are only eaten with a fork, never with a spoon
- Eating in Italy is a way of life — preferably at the long table, with friends and family, for hours and stress-free

Ladin Apple Fritters with Vanilla Sauce

Ingredients
- 400 ml heavy cream
- 65 g sugar
- 1 teaspoon pure vanilla extract
- 1 tablespoon seed oil
- 5 tablespoons milk
- 150 ml sparkling mineral water
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 220 g flour
- 4-6 medium apples
- Peanut oil to fry the apples
- for decoration: cinnamon, icing sugar
Directions
- Step 1 Place the heavy cream, sugar, and vanilla extract in a saucepan and bring to a boil over medium heat, stirring constantly. Reduce heat to medium-low and continue to stir until the mixture thickens.
- Step 2 In a large bowl, stir together the oil and the milk, the water, then the eggs, the salt, and the sugar – until it’s all well blended.
- Step 3 Pour in the flour, slowly and well sifted, to have no clumps and stir until you have a soft, blended mix. Let it stand 15 minutes in the fridge.
- Step 4 Peele, core and slice the apples making disks, about 1 cm.
- Step 5 Heat the oil in a deep-fryer to max. 170 degrees (or use a pan, but be careful).
- Step 6 Deeply dip the apples in the batter until they are completely covered.
- Step 7 Drop covered disks into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Remove from the hot oil using a slotted spoon and drain briefly on paper towels.
- Step 8 Sprinkle with cinnamon, and icing sugar while still warm. Serve with Vanilla Sauce.
- Step 9 As an alternative, you can garnish with cranberry jam.
- Step 10 Tip: You can make the Vanilla Sauce earlier and heat in the microwave before drizzling the fritters (because the sauce thickens as it cools).
