Pumpkin muffins

Ingredients
  • 300 g pumpkin puree (Hokaido or butternut)
  • 150 g soft fat (margarine or butter)
  • 150 g cane sugar
  • 2 eggs (vegan variant: soy flour)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon salt and nutmeg
  • ¼ teaspoon cloves and ginger powder
  • 300 g spelt flour
  • 2 teaspoons baking powder
Directions
  • Step 1 Mix all the ingredients and blend to a smooth dough.
  • Step 2 Put the dough into a muffin baking tray.
  • Step 3 Bake the muffins in a preheated oven at 190 degrees on a medium shelf for about 20 minutes.
