Noodle Dishes in Thailand

Unfortunately, we are not yet able to travel to Thailand again. Therefore, we are even happier about the noodle dishes of our hotels, with which we bring a little bit of Thailand into your kitchen. Maybe you will plan your next stay at the beautiful hotel pools and the comfortable hotel rooms of Keemala and Tongsai Bay while you are eating.

 

Keemala - grilled salmon with pasta

Ingredients
  • 200g Salmon fillet
  • 100g Penne pasta
  • 50g Zucchini
  • 30g Tomato
  • 5g Garlic
  • 5g Sesame
  • 30g Parmesan cheese
  • 20ml Olive oil
  • 20ml Balsamic vinegar
Directions
  • Step 1 Cook the pasta for 8 minutes or until al dente, lightly salted.
  • Step 2 Dice tomatoes and zucchini into medium-sized pieces.
  • Step 3 Mince the garlic.
  • Step 4 In a pan, roast olive oil, garlic, cooked pasta, tomatoes, and zucchini. Season with salt and pepper, and add parmesan cheese.
  • Step 5 Season the salmon fillet with salt, pepper, and olive oil, and grill on a pan.
  • Step 6 To serve, plate the dish with pasta, top with salmon fillet, and add balsamic vinegar and sesame.

 

The Tongsai Bay -

Ingredients
  • For the jackfruit ravioli
  • 6 yellow, round Wan-Tan dumpling sheets
  • approx. 250 g young jackfruit
  • 1 egg yolk
  • 15 g homemade red curry
  • 5g lentil beans
  • 15g white onion, chopped
  • 100ml coconut milk
  • 1 teaspoon fish sauce
  • 1 teaspoon white sugar
  • For Nam Yar Pla: Thredfin bream with yellow coconut curry
  • 300g steamed and chopped sea bream
  • 50g red curry paste
  • 250ml coconut milk
  • 1 pc. Lemongrass
  • 2 pcs. Kaffir Lime Leaf
  • 1 tablespoon fish sauce
  • 1 teaspoon white sugar
  • For garnishing and seasoning
  • 45g chopped spring onion
  • 45g chopped red shallot
  • 45g chopped leek
  • 45g Shredded fresh banana blossom
  • 1 pc. Beet Tuile
Directions
  • Step 1 For the jackfruit ravioli: Boil the flesh of the jackfruit in sufficient water until it is cooked.
  • Step 2 Drain the water and put it in a saucepan together with the red curry, chopped onions, lentil beans, coconut milk, fish sauce, white sugar, and a tablespoon of oil until combine together and taste.
  • Step 3 Put a teaspoon of jackfruit filling in the middle of each half of the dumplings. Brush the egg yolk lightly around the edge of the circle. Place the second circle on top of the filling and use a fork to gently press the edges in.
  • Step 4 To cook the pasta, bring a pot of salted water to a boil. Add jackfruit ravioli and cook for 2-3 minutes. As soon as they float on top, they are cooked. Drain the jackfruit ravioli and drizzle with olive oil.
  • Step 5 For Nam Yar Pla: Thredfin bream with yellow coconut curry: Heat the coconut milk in a deep frying pan and add the red curry paste. Stir-fry for 3-5 minutes, then add lemongrass and kaffir lime leaves until they float when they are cooked.
  • Step 6 Then put some coconut milk in a pot, season with fish sauce, and bring to boil with white sugar.
  • Step 7 Add the chopped fish and stir until fish & curry combine together and taste.
