Today we have a traditional Christmas recipe for you: East Tyrolean Blattlstock, also called Mohnblattln. The poppy seed and lard coated plate-sized yeast dough Blattllan are tower-shaped 6 to 8 times stacked on top of each other. Finally, the Blattlstock is doused with melted butter – a really tasty and hearty rustic dish.

A real East Tyrolean classic for Christmas or New Year's Eve: the Blattlstock. In the recipe from Hotel Outside you will learn how the Austrian specialty turns out best.

Ingredients
  • Germ dough Blattln
  • 750 g plain flour
  • 100 g sugar
  • 100 g butter
  • 2 eggs
  • 2 yolks
  • 1 cube fresh yeast
  • 1 pinch of salt
  • 1 pinch of baking powder
  • approx. 250 ml milk
  • 2 cl schnapps
  • vegetable fat
  • Poppy seed filling:
  • 1 l milk
  • 2 packages of vanilla pudding
  • 200 g sugar
  • 750 g grated poppy seeds
  • 150 g melted butter
  • cinnamon, grated lemon peel, rum
Directions
  • Step 1 Dissolve yeast in lukewarm milk and melt butter. Mix all ingredients and knead into a medium-stiff dough.
  • Step 2 Let dough “rest” in a warm place, which should double its volume. After kneading again, divide dough into 5-6 pieces, roll out and let “rise” again briefly.
  • Step 3 Prick the leaves with a fork and fry in vegetable fat over medium heat. Drain baked dough sheets well.
  • Step 4 Boil pudding, stir in remaining ingredients (except butter) to achieve a spreadable consistency.
  • Step 5 Finally, spread baked out Blattln with poppy seed mixture and pour over a little melted butter, again added Blattn on top, etc. – until the stick is ready.
  • Step 6 Stock is cut into cake pieces before serving, so that on Christmas Eve or New Year’s Eve everyone can take their own pieces as they wish.
