WILD BROCCOLI WITH ONION, BACON YOLK AND MILK CHIP

Ingredients
  • 8 large broccoli leaves
  • 8 broccoli florets
  • 8 broccoli flowers
  • 1 lemon
  • 200 ml buttermilk
  • Apple cider vinegar
  • Fermented corn starch
  • 4 small white onion
  • 1 bay leaf
  • 6 black peppercorns
  • 6 coriander seeds
  • 3 juniper berries
  • 1 teaspoon whole caraway seeds
  • 300 ml water
  • Apple cider vinegar
  • Sugar
  • 4 organic eggs
  • Smoking chips
  • 200 ml milk
  • Pepper
  • Salt
Directions
  • Step 1 For the wild broccoli
  • Step 2 Blanch broccoli leaves and florets briefly in salted water and quench in ice water. Sauté in a little clarified butter before serving. Marinate broccoli flowers with a little lemon juice just before serving.
  • Step 3 For the buttermilk glaze
  • Step 4 Season the buttermilk with apple cider vinegar, salt, and the juice and the peel of the lemon, and thicken slightly with a little fermented cornstarch.
  • Step 5 For the spicy onion
  • Step 6 Peel onion and cook until soft with remaining ingredients. Remove onion from stock and place in buttermilk glaze.
  • Step 7 For the bacon yolk cream
  • Step 8 Put the whole eggs in the freezer for 24 hours, then let them defrost slowly. By freezing and defrosting again, the egg white is liquid and the yolk remains hard. Smoke the yolks at 60°C in the smoker for 20 min. Then mix with a hand blender until smooth and season with salt.
  • Step 9 For the milk chip
  • Step 10 Lightly salt and pepper the milk. Pour 100ml each into a well-coated pan and let it slowly reduce over low heat until the milk sugar starts to caramelize. Now carefully turn until the chip is crispy.
  • Step 11 Arrange on a plate
