Isn’t the pumpkin spice latte trend a thing of the past? Not for us, anyway! It’s the perfect drink, especially in the colder months. And best of all, you can make it at home. We got the recipe from the sustainable Hotel Okelmann’s and its café Heimatliebe. For a vegan version, we recommend Oat Milk Barista.
What do you need to make a pumpkin spice latte?
The Pumpkin Spice Latte (also known as PSL) originated in the American coffee movement. Starbucks made it popular 20 years ago (2003). In America, pumpkin is not typically associated with pumpkin flavoring, but rather with the spice blend used in Pumpkin Pie, the obligatory dessert after Thanksgiving dinner. Pumpkin Spice consists of
- Cinnamon (4 parts)
- Nutmeg (1 part)
- Clove (1 part)
- Ginger (1 part)
- Allspice (1 part)
You are going to use this spice blend for sprinkling only. The flavor of the latte comes from the syrup.
Does a Pumpkin Spice Latte contain pumpkin?
Starbucks beverage did not contain pumpkin until 2015. In that year, the syrup recipe was changed. The Sonnentor organic syrup used by the sustainable Hotel Okelmann’s has 30 percent organic pumpkin juice concentrate.

Café Heimatliebe from Eco-Hotel Okelmann’s
Hotel Okelmann’s belongs to the Okelmann family since 1916. It’s located in the beautiful village of Warpe in Lower Saxony. The hotel has a restaurant and café called Heimatliebe, whose homemade cakes are popular with day-trippers. Regional products from the surrounding area are served here. Everything else that is bought, such as spices, is organic.

Pumpkin Spice Latte
Equipment
- 1 Latte macchiato glass
Ingredients
- 180 ml (6 oz) Organic milk or plant-based drink (e.g. oat milk barista)
- 2 cl Pumpkin Spice Syrup (e.g. available from Sonnentor and in organic stores)
- 1 Espresso (25 ml)
- 1 pinch Pumpkin Spice Powder (organic)
Instructions
- Heat the organic milk or plant-based drink to 60°C (140°F), froth it, and pour into a latte macchiato glass.
- Add the syrup
- Add the espresso
- Sprinkle with pumpkin spice
