Autumn is just ahead, also at the Green Pearls® office. Besides a cup of coffee in the morning, there is also a pot of tea and during lunch break, we long for a warming dish.
My requirements regarding food for the lunch break are not high: fast and healthy – and to warm me up in autumn and winter. That’s why I’m changing salads for soups. I prefer the Asian Style, like Instant-soups, which are only poured with hot water. But to be sure about what is inside, I prepare it myself. Thus, you are also saving trash, which is usually caused by instant dishes.
Soup with a modular concept
Prepare your soup in the evening and keep it in the fridge until lunch break. Then simply pour it with cooking water, wait a few minutes until the noodles are soft and start enjoying.
The basis of the soup is always the same, but you can adapt according to season or taste:
- Spice base (e.g., vegetable stock or miso pasta)
- Glass or Mie pasta
- Fresh and finely cut vegetables (e.g., carrots, paprika, courgette, mushrooms, and broccoli) or deep-frozen vegetables like peas and corn
- Tofu
- Herbs like coriander or parsley, spring onions, gingers, garlic or chili
- Freshly brewed, I refine the soup with soy or Sriracha sauce
DIY-Asian Instant soup

Ingredients
- 1 TS Miso paste
- Glass or Mie pasta (amount depending on size of the glass)
- 1 carrot
- ½ courgettes
- 1 handful of Chinese cabbage
- ¼ blocks smoked tofu
- Parsley
- Ginger
Directions
- Step 1 Spread miso paste on the ground of the glass.
- Step 2 Break up the raw glass pasta so they fit in the glass
- Step 3 crush noodle nests.
- Step 4 Cut Carrot and courgette in thin stripes and put over the noodles.
- Step 5 Crush Chinese cabbage, cut smoked tofu in cubes and put both in the glass.
- Step 6 Chop the parsley and ginger and cover the vegetables.
- Step 7 Close the vial and keep in the fridge keep until lunch time.
- Step 8 Cook water and fill the glass. Depending on the noodles wait up to 10 minutes and stir well.
- Step 9 Taste with Soy or Sriracha sauce, depending on your taste.
